Dan's Lime Chicken Tacos


So, Dan being the good cook that he is, invented these amazing tacos that are truely to die for delicious.  Honestly people, I still think about (days later) how good they were. This is what's for dinner tonight folks. Trust me whoever you cook these for will love you forever. Cause now I am pretty sure I am going to love Dan forever. Thats a little too cheesy for me to type here on the blogspot but serioulsy, they are that good. 

On top of being delicious they are very healthy. Check it out- here are the players:

3 large chicken breast (the fresher the better)
1 1/2 cups shredded spinach (we like lots, so you can do less if you want, or use lettuce)
1 1/2 cups skim mozzarella cheese
1 can of white beans (use tons of pepper on these, pepper is my favorite)
3/4 cup freshly diced red pepper (more or less is fine here, goes awesome with the lime)
Juice from 2 limes (I know thats a lot but its SO good)
Corn Tortillas
Salt and Pepper
Olive Oil

Cube and cook the chicken in a skillet with a splash of olive oil. When the chicken is about halfway done, add the lime juice. When the chicken is almost done add the diced peppers. Saute until peppers are tender. Don't let the chicken dry out so don't over cook it. 

While the chicken is cooking, coat generously the bottom of another skillet with olive or canola oil, whichever you prefer (olive is better I think). Heat the oil on high until it's hot enough to "crisp up" the corn tortillas. Place the tortillas in the hot oil for awhile on each side, we liked 'em really crrrrispy but you can crisp as much or as little as you like. 

When the chicken is done and the tortillas are crisped, assemble the goodness!

First the tortilla, then the chicken, then the beans, then the cheese, then the spinach, then more cheese. Oh heavens you are going to love it. PLEASE tell me if you liked them! Leave me some comments!

Cat, these were the best! I had them hot and ready when Jason got home from three days of chaperoning outdoor school, and everyone loved them! They were all mystified by the crispy tortillas and every last one of them thought I did it on accident, but we all agreed that we love the crisp. Thanks!
