Easter Time

This year all the Clasons came to Rexburg for Easter and my graduation. We all crammed into the Rexburg house and enjoyed eating Matt's divine stir fry, a hilarious game of pictionary and our annual tradition of the Easter egg roll. We usually do it at the beach, but seeing how we live in the barren waste land of Rexburg, all we had was either snow piles or dirt. We opted for the dirt. It actually worked perfectly. Check out all the cool pictures below.  Wish the Clasons in Dubai could have been here, we missed you.

After all the winners and losers brackets Matty's egg won it all. Great pose don't you think?

Thanks for coming everyone, it was so much fun having family around for the holiday and supporting me at graduation. Love you all. 

Dan's Lime Chicken Tacos

So, Dan being the good cook that he is, invented these amazing tacos that are truely to die for delicious.  Honestly people, I still think about (days later) how good they were. This is what's for dinner tonight folks. Trust me whoever you cook these for will love you forever. Cause now I am pretty sure I am going to love Dan forever. Thats a little too cheesy for me to type here on the blogspot but serioulsy, they are that good. 

On top of being delicious they are very healthy. Check it out- here are the players:

3 large chicken breast (the fresher the better)

1 1/2 cups shredded spinach (we like lots, so you can do less if you want, or use lettuce)

1 1/2 cups skim mozzarella cheese

1 can of white beans (use tons of pepper on these, pepper is my favorite)

3/4 cup freshly diced red pepper (more or less is fine here, goes awesome with the lime)

Juice from 2 limes (I know thats a lot but its SO good)

Corn Tortillas

Salt and Pepper

Olive Oil

Cube and cook the chicken in a skillet with a splash of olive oil. When the chicken is about halfway done, add the lime juice. When the chicken is almost done add the diced peppers. Saute until peppers are tender. Don't let the chicken dry out so don't over cook it. 

While the chicken is cooking, coat generously the bottom of another skillet with olive or canola oil, whichever you prefer (olive is better I think). Heat the oil on high until it's hot enough to "crisp up" the corn tortillas. Place the tortillas in the hot oil for awhile on each side, we liked 'em really crrrrispy but you can crisp as much or as little as you like. 

When the chicken is done and the tortillas are crisped, assemble the goodness!

First the tortilla, then the chicken, then the beans, then the cheese, then the spinach, then more cheese. Oh heavens you are going to love it. PLEASE tell me if you liked them! Leave me some comments! 

For Dan, on His Birthday. El Quatro de Mayo

On May 4th, it was Daniel's birthday. We had a raging party downstairs in the basement (thanks Jody), complete with a electical outlet pinata (thanks Aimee). Or as Ila calls it a "pinadia", pin-naw-dee-ya, or as Isaac calls it a "candiada"- no translation needed I think. We had a great time: cake, candy, pie and presents. What more could a Zimmer ask for?

National Champs Part 2

Here are more pictures of the events down at Cal Poly Pomona. We spent all day Saturday running around campus watching all the events and enjoying the 80 degree weather. I finished with my events earlier that day and they were both indoors so I don't have any pictures of me in action, sorry.

In this picture we tried to pose for a picture in front of the campus entry sign but the cross walk had just given us the "white walking guy" symbol so we had to run for it. 

This is me relaxing in the shade while watching a competition right next to the track on campus. Check out the mountain peak in the distance. Cool right?

Some of the plant material on Pomona's campus was amazing. It probably isn't as special to the California people in my fam (Anne and Jord, John and T) but to me it was so awesome seeing all the plants that I've only seen growing in greenhouses growing outside! Check out the Bird of Paradise flowers that were as tall as me! I know that's not very tall but still. 

This is me in front of a neat building on campus, the school was HUGE. 

The picture below is at the awards ceremony. We are the only returning members from the team last year. We were excited to finish off our college careers with this big win for BYU-Idaho. We all graduated from BYU-I a week later (pics of those events coming soon, I promise). The trophy was really heavy, and awesome, and pretty.

It was so amazing to be a part of such a huge national competition. I am getting a little sad thinking about how I probably won't ever have that opportunity again. Thanks to all those who supported me and wished me luck before I went. It worked.
